Raptor Ridge Winery - Oregon Pinots

2007 Vintage

The 2007 growing year was challenging to be sure, but we had substantial heat unit accumulation and ripening during the summer months. This drove solid tannin development. The challenge came with the rain storms during the last few weeks of the vintage, just as the fruit was coming ripe.

We used some "winemaker's intervention" during fermentations, using extremely cold, long pre-fermentation soaks, and using enzymes during primary fermentation. Then we heated up the fermenters and got the wines in and out quickly to keep bitterness to a minimum.

In leaner vintages like 2007, Pinot noir often evolves slowly. The young wines are not full of obvious fruit. Rather, their nuanced details, complex tight flavors and layered tannins shroud the wines until the fruit begins to reveal itself and provide balance.
